Mons Acutus – Bonarda Vivace

Intense ruby colour with brisk head. Scents of fresh friuts and tempera. It is vibrant and fresh to the palate, soft with pleasant tanninic note.

Zona di produzione: Municipality of Bosnasco and Montù Beccaria

Vitigni: Croatina 90%, Barbera 10%.

Acreage: 2.5 acres.

  • Harvesting*: In the last decade of September.

Cultivation system:Vine density of 4100 plants per acre with newly inserted canopies. Permanent natural grass and modest fertilisation, mostly organic.

Production parameters:
Maximum grape production (yield): 100 hl/ha
Low rate of leaves blossoming.
Low production rate per plant.
Selective pruning and harvesting of the grapes. 
Autochthonous yeasts.
Temperature-controlled fermentation in stainless steel barrels.
Short and intense maceration.
Second fermentation in autoclave

  • Combination*: Ideal companion of salame, prosciutto and appetisers even when strong flavoured. Recommended with tripe. To be drunk with selected friends.
