Pinot Nero

Delicate ruby colour. Floral opening enveloping the nose, it persists with notes of small ripe fruits. It is enjoyable to the palate for its fresh and clean flavour. In a complex of good sapidity, it's convincing for its elegance and drinkability.

Zona di produzione: Vineyard “La Fiocca”, Municipality of Bosnasco.

Vitigni: Pinot Nero, with ages ranging between 30 and 40 years.

Acreage: 2.5 ettari

Harvesting: In the first decade of September, the grapes are harvested in the cool hours of the day, collected in 20 kg boxes and pressed immediately.

Cultivation system: densità impianto 4000 ceppi per ettaro, una vigna a tralcio rinnovato, un’altra a cordone speronato, inerbimento naturale permanente, concimazioni contenute prevalentemente organiche.

Maximum grape production (yield): 60 hl/ha
Low rate of leaves blossoming.
Low production rate per plant.
Selective pruning and harvesting of the grapes. 
Autochthonous yeasts.
Skin-contact maceration.
Temperature-controlled fermentation.
Highest attention to flavours and smells.

Minimal natural alcoholic content: 12%
Minimal acidity: 4.5%
Minimal extracted dry lees: 22%

Combination: It pairs up well with light appetisers and game dishes.

Serving temperature: 14-16 °C
