Elos

Intense bright yellow colour; ample scent with strong reminiscences of ripe fruit and honey with soft vegetable background. Full taste, elegant and sweet with remembrances of ripe apricot.

Zona di produzione: Vineyard “il Fornacione”, Municipality of Bosnasco.

Vitigni: aromatic Malvasia di Candia; implanted in 1985.

  • Acreage*: 1.2 acres.

Harvesting: the grapes are harvested in the last decade of November and a part is treated with Botrytis Cinerea.

Cultivation system: Vine density of 4000 plants per acre with newly inserted canopies. Permanent natural grass and modest fertilisation, mostly organic.

Production parameters:
Maximum grape production (yield): 50 hl/ha
Low rate of leaves blossoming.
Low production rate per plant.
Selective pruning and harvesting of the grapes. 
Treatment with Botrytis Cinerea.
Autochthonous yeasts.
Temperature-controlled fermentation.
Retention of natural residual sugar

Combination: It accompanies well herb cheeses and smoked food. It doesn’t dislike the spicy patisserie.

Serving temperature: 15-16 °C
